Unlike the fiery red, masala-loaded biryanis of Hyderabad or the sweet potato-infused plates of Kolkata, true Awadhi biryani (traditionally referred to as Pakki Biryani or Dum Pukht Gosht Pulao) is all about delicate subtlety, aromatic potli broth, and meat that yields to the gentlest touch. Nowhere is this ancient science more fiercely guarded than at Idrees Biryani in Chowk.
Cooking Over Wood Fire in Sealed Copper Handis
Established in 1968 by Mohammad Idrees, the kitchen still cooks exclusively over slow-burning wood and coal fires. The mutton is first stewed in a complex Yakhni (aromatic meat stock infused with mace, star anise, nutmeg, black cardamom, and dried rose petals). High-grade aged basmati rice is parboiled in this seasoned stock, layered with the tender meat, sealed with dough (dum), and left to mature for hours.
The Sensory Experience
When the dough seal is broken, a cloud of fragrant saffron and kewra steam fills the room. The rice grains are separate, glistening with natural mutton fat, and colored in gradient shades from pearly white to sunset orange. Each bite is tender, moist, and gentle on the stomach.
